I was craving 7-11 Brownies (If you have not tried them, immediately do so) and seeing as how eating them is not an option, I decided to make some from scratch. I Googled a basic brownie recipe, chose one, and then supplemented with Keto/Sugar/Starch free ingredients. These are also Gluten free, Keto Brownies!
Gluten Free Super Moist Brownie Recipe
1/2 cup coconut flour
1/2 cup almond meal (almond flour or ground almonds)
1 tablespoon of ground flax seed
1/2 teaspoon xanthum gum
1 teaspoon vanilla (GF)
1/2 teaspoon salt
2 eggs
2 tbsp Unsweetened Cocoa Powder
1 tbsp baking powder
1/2 cups Erythritol/Truvia
1 1/4 stick butter, softened
1 cup, heaping, sugar free dark chocolate chips
Preheat oven to 350 degrees. Grease a 8×8 ceramic brownie dish (I use butter to grease the dish for this recipe.) Next, in the microwave or double boiler (on the stove) melt the stick of butter, chocolate chips and salt. Stir until just melted. Remove from heat.
In separate bowl combine rice flour, almond meal, flax seed, xanthum gum and set aside. In another bowl, pour chocolate mixture, add eggs, sugar and vanilla. Mix well (I use a Kitchen Aid mixer for this). Once well incorporated, add flour mixture. Stir well.
Pour into greased pan and bake at 350 degrees for 35 minutes or until a toothpick inserted in middle comes out clean.
Serves 12-14.
These Keto Brownies came out AMAZING! The only thing I did differently as far as the preparation was that I used a circular pie dish instead of the 8×8. Also, I purchased the Almond and Coconut flour, as well as the Xanthum Gum, from Nuts.com. I also used parchment paper to line my pan instead of greasing the pan with butter, in my opinion, the brownies slide out much easier that way and who needs the extra butter right? They came out DELICIOUS!! My son just finished his second. They came out moist and chocolatey. I will definitely be making them again but will be playing with the recipe, like maybe adding creme cheese or different toppings.
